Change example.com mail domain in the scanner

The scanner injects the "example.com" domain in a lot of requests. Especially in contact forms it would come in handy to have this customisable to another domain. The solution would be to give a user the option to change "example.com" to a custom domain in the Burp Suite config/interface.

This is not actually the Scanner, but the Spider. When you spider an application, Burp fills out form fields with various values, and if you then scan the spidered requests, Burp will use the same values that were submitted during spidering. You can configure the values that the Spider uses for form submission at Spider / Options / Form submission.
