This really depends on the expected load, which in turn depends on the number of concurrent scans you perform and the amount of vulnerabilities in the applications that you test. Unless you have a huge team, or targets that are riddled with relevant flaws, you can probably manage with relatively modest resources, such as 4Gb of available memory and 2 CPU cores. If you aren't sure, we would suggest trying out something sensible and monitoring the CPU and memory utilization of the server once it is in use.

Thanks. Do we need two NIC for this?

No, you can do everything with a single NIC. For some configurations, you might need to configure multiple IP addresses on the NIC, for example: - Your domain registrar requires two DNS servers with different IP addresses - You want separate IP addresses for interactions and polling, so you can implement network-level access control But even in these situations you can normally do what you need with a single physical NIC.
