Automatically intercept specific requests

I want to use some type of a mix between intruder and proxy intercept. I want to do so every time I make a specific request it will automatically intercept the message and edit a specific variable. For example: let's say I try to login into my user in a site that uses CAPTCHA, I will login normally, pass the CAPTCHA challenge and press the submit button. Then the proxy will see the specific request message and will simply edit the request by changing variables like the username or the password using intruder functions. This way I can get the CAPTCHA token which will give me some kind of way to semi-manually brute-force accounts for testing.
